What happened to the Galactic Empire in the Sequel trilogy?

In Lucasfilm’s Sequel Trilogy (The Force Awakens, The Last Jedi, and The Rise of Skywalker, the Galactic Empire created by Supreme Chancellor/Emperor Sheev Palpatine 19 years before the events of Star Wars - Episode IV: A New Hope is no more.
With the destruction of the second Death Star, the death (presumed, anyway) of Emperor Palpatine, the death (confirmed) of his fearsome agent Darth Vader, and thousands of Imperial senior commanders and field-grade officers at the Battle of Endor and elsewhere, the old Empire shattered and was defeated after several years by the New Republic. The Galactic Civil War ended when the remnants of Palpatine’s government led by Grand Vizier Mas Ameddas signed the Galactic Concordance five years after the Battle of Endor.
However, a core of Imperial fanatics, including Brendol Hux, his young illegitimate son Armitage, and Grand Admiral Rae Sloane, made their way to the Unknown Regions (the Star Wars galaxy’s counterpart to South America, where many Nazi officers and hangers-on went into hiding after Germany’s defeat in World War II) and set up an intricate system of shipyards, training bases, and military academies with the goal of eventually defeating the New Republic and imposing authoritarian rule via a dictatorship based on the principles and laws of the former Empire.
I don’t know when or how Supreme Leader Snoke rose to power and took the reins of power in this new entity, which calls itself the First Order.
I do know that the First Order idealizes Palpatine’s New Order and tends to mimic the old Imperial aesthetic, including in the continued use of TIE fighters, Star Destroyers, and the deployment of highly trained and loyal-to-the-First Order stormtroopers.
Per the film’s opening crawl.
Episode VII
THE FORCE AWAKENS
Luke Skywalker has vanished. In his absence, the sinister FIRST ORDER has risen from the ashes of the Empire and will not rest until Skywalker, the last Jedi, has been destroyed.
With the support of the REPUBLIC, General Leia Organa leads a brave RESISTANCE. She is desperate to find her brother Luke and gain his help in restoring peace and justice to the galaxy.
Leia has sent her most daring pilot on a secret mission to Jakku, where an old ally has discovered a clue to Luke’s whereabouts….
But to be clear: While the First Order of the Sequel Trilogy sees itself as the successor of the Galactic Empire, it is not the Empire.
